Kanten is a delicious, all natural gelatin made with apple juice or any other juice as a base. Try it with nuts, fresh fruits, or even azuki beans with raisins. A few nuts or seeds may be added for a crunchier texture. Kanten is a vegetarian alternative to commercial Jelly that is made with animal products.
Properties of agar-agar: High calcium and iodine – very good for the intestines.
Ingredients
1 cup apple juice
1 cup water
1 cup apples, cored and diced
2 tsp brown rice syrup (optional)
Pinch sea salt
2 tsp agar-agar flakes
Preparation:
1. Combine apple juice, water, sea salt in a pot and sprinkle with the agar-agar flakes.
2. Bring to a boil, reduce heat, and simmer until kanten is dissolved, about10 minutes.
3. Add apples and rice syrup and cook for 5 minutes.
4. Remove from heat, cool and spoon into individual serving bowls. Chill before serving.
